Healthy Lemon Protein Poppy Seed mini cakes♥


Hello Guys :)

Today I will share with you, an amazing recipe ! They are great for a snack or when you want sth sweet or after a workout when you want sth to crave :)



Ingredients:

3/4 cup oat flour (  blend 1 cup of oats in  a food processor )
3/4 cup vanilla whey protein powder ( 3 scoops)
1/2 tsp baking soda
2 tsp poppy seeds
1 packet stevia
1/2 cup egg whites 
1 cup unsweetened applesauce
2 tbsp plain fat free greek yoghurt
1/4 cup lemon juice
1 tbsp + 2tsp lemon zest
2 tsp vanilla extract


Instructions:

Preheat oven to 350 F and spray a baking dish with oil or cooking spray. Combine the first 4 ingredients in one bowl and all remaining ingredients in another. Pour the bowl of wet ingredient into the dry bowl and stir until smooth. Pour the batter into the prepared baking dish, Bake for 40 min, at which point the outsides should be golden in colour.
Let the mini cakes cool  and enjoy ! ♥
